As a busy working parent, weekdays are hectic, to say the least. You may consider yourself lucky if you get the kiddos out of the house on time, with their lunch packed and homework done. So what do you do after a long day at work without any dinner planned? Instead of heading straight for some fast food, try a healthy family meal at home! Eating healthy doesn’t have to mean complicated meal prep and it doesn’t have to be time-consuming, either. Here are some of my favorite healthy family meals, perfect for weeknight dinners.
1. Caramelized Cauliflower and Mushroom Casserole
This casserole is super easy to make and super delicious to eat! After you’ve prepped all your ingredients, stick the casserole in the oven for 40 minutes and sit down and relax. This is a great meal to enjoy with your family and is super healthy too.

2. Slow Cooker Pork Tacos
Slow cookers are the best thing since sliced bread. Maybe even better than sliced bread! All you have to do is put your pork in the slow cooker before you go to work in the morning. Once you get home, the meat will be tender and cooked to perfection. Grab a plate and some of your favorite veggies and tacos are done!

3. Linguine with Roasted Broccoli, Pine Nuts, and Goat Cheese
Pasta is always a great weeknight option, but I’m always a fan of veggie pasta. This linguine recipe is delicious and nutritious because it’s packed with veggies. Your kiddos won’t even notice the veggies because of how creamy and cheesy it is!
