There’s just something about meatloaf. Something that reminds me of my grandparents house in the winter. To me the thought of meatloaf invokes images of children running inside for dinner on a chilly evening after playing outside in the snow. A warm meal can nurture your body, reinvigorate your mind after a long day, and remind you of home. If there’s anything that will bring you back to your childhood it is this meatloaf.
This loaf of goodness truly is more than the sum of its parts. And it’s so simple! Using ground beef chuck and pork as a base you only need to saute the vegetables; mix with the meat, herbs, and other remaining ingredients; and bake. And after this short, hands-on prep time you get to just sit back and let the smell of yesteryear take you.
Serve with mashed potatoes, gravy, and roasted brussels sprouts for a traditional, and delicious, dinner. Any leftovers will make great sandwiches for lunch the next day.
